Both! It depends entirely on the size of the boat and its capabilities. Some boats even process the fish, package it, label it, and fast freeze it so it is ready to ship to market before the boat even gets to the dock. For still other boats, processing boats meet the fleet on the open sea and transfer fresh caught fish from the trawler to the bigger ship where all steps and stages of the preparations are completed. The bigger boats and ships have their own refrigeration equipment to cool fish, make ice, or freeze fish already processed. Wasting fish by not keeping them fresh is closely scrutinized by law enforcement and the fines are heavy. No one in the fishing industry can afford to run the risk of spoiled fish because of insufficient cooling equipment.
